Baba Ganoush - Roasted Eggplant Humus

When my garden turns up eggplants and garlic, and my lemon tree still holds one last lemon, I dream of creamy baba ganoush, the best way to eat eggplants. Simply roast your veggies whole, peel them and toss them into a blender with a few tasty ingredients and you will have a delicious roasted eggplant humus.

My neighbor brought over a delicious Persian cucumber, so we ate ours Mediterranean style. This dish will impress your vegan friends, as well as your Paleo friends so bring it to your next pot luck to please everyone.
