Easy Handmade Sushi Rolls

My family loves sushi and they ask for it all the time. Since I adhere to seafood sustainability, quality sushi can be quite a luxury item. I attempted to make my own sushi rolls and found it was remarkably easy. Now, my children can make their own lunchtime rolls and I can be sure the ingredients are nutritious, sustainable and there is no added sugar. When I send these in school lunches, I focus on filling them with healthy essential fats and protein to "fuel" their brains.

This photo shows an inside out roll, but it is easier to hold when the rice is on the inside.
