Lasagna Food Foundation Style

Ahhh, lasagna, one of the ultimate comfort foods. I love most casseroles because they only leave one dish to clean, they can incorporate leftovers, odds, and ends, and they can be made ahead of time, frozen, or left in the fridge overnight, and the flavors only get better.

More reasons to love casseroles are that they are easy for kids to put together for you, the sauces can hide loads of vegetables and once you cover the entire thing in cheese, most people get starry eyed and anxious to eat.

Lasagna Food Foundation Style

Our family does not eat gluten so the best lasagna noodles I have found that do not have poor quality ingredients like canola oil and sugar are by Jovial. Ideally I would make noodles, but that may be in another lifetime. I have made this dish with other noodle shapes in a pinch and it is just as delicious.

When I make spaghetti sauce I make a big batch, freeze some for later and save some in the fridge for this lasagna recipe. The sauce takes the longest time to put together so make it ahead of time, enjoy it over a spaghetti squash and make this on a lazy weekend.

We like to serve this lasagna with a crisp Caesar salad. Because casseroles like lasagna take longer to prepare, I often make two at the same time and freeze one for that really busy weekend when I need some good old comfort food.
