My friend Val introduced me to her hand-roasted Rosemary Cashews and I was in heaven. Marcona Almonds are the plump almonds, roasted in oil, and sprinkled with rosemary and salt from Spain. We took the recipe to a whole new level of flavor, health, and made it in under 10 minutes.

Try this super easy peasy recipe and turn your raw nuts into a tasty delight! We want to avoid heating very delicate oils such as sunflower, safflower, canola, and corn oils that become denatured and cause inflammation in the gut. Look for more appropriate oils such as olive oil, ghee, or coconut oil when roasting nuts.

Cashews are high in Vitamin K, Vitamin B6, Vitamin E, zinc, magnesium, and iron. They support proper thyroid metabolism and digestion.
