Sweet Potato Coins

We may have given up sugar in our household, but we still love sweet things. When I really have a sweet craving, I roast up some sweet potato coins and make extra for breakfast, a lunch snack, or even for dessert. Not sure if you love sweet potatoes? I dare you to try and resist these...

I like to wash and cut up sweet potatoes like coins, skin on and everything. Then, I rub them with melted butter, olive oil, or coconut oil depending on my mood, and sprinkle them with cinnamon and sea salt. I bake them at 375º for about 35-45 minutes until the house smells AMAZING and serve these up for a side dish. I have not met a child that has turned up their nose to my sweet potato coins, but in the rare event that they do, try this silly tip.

We all know children love when parents act ridiculous, so simply place the coin in your mouth, pull down your "slot machine arm," and ask the kids what they think the robot will do? Then do something silly like wink, pretend fart, or talk a made up language. If the kids are not asking for a turn yet, put a coin in your spouse's mouth, pull down their "slot machine arm", and have them do something really silly like a little robot dance. Your child will beg for you to put the coin in their mouth and once they taste how delicious these are, they will never say no again.

Don't forget to have fun, after all, it's just food.
