The Perfect Quiche Recipe
From a chef's perspective, throwing eggs into a beautiful quiche is an easy way to impress. The beauty with the perfect quiche recipe is that anything goes. You can follow my basic guidelines and make this with leftovers you find in the fridge.
This particular quiche has an almond flour crust, 1 zucchini, some shallot, and a small piece of feta because that is what I could find. Here is how to assemble your quiche for a Sunday brunch.
Step 1: The Crust
Gluten-Free: 1 1/2 cups almond flour, 1/2 stick of cold butter or 1/4 cup coconut oil, 1/4 tsp sea salt. Mix by hand into a ball of dough and press it into the bottom of the pie dish. Bake at 400 for 10 minutes
Heritage: 1 1/4 cup sprouted wheat flour, 2 Tbsp cold butter, 3 Tbsp cold lard, 1/4 tsp sea salt, 6 TBSP cold water. Fold everything into a ball of dough, roll out and press into the pie dish. Bake with dry beans or weights over the crust so it doesn't rise, 375 for 15 minutes.
Step 2: The Barrier
This is where we add the cheese on top of the crust to make a barrier between the crust and custard. You can use as little as 1 Tbsp of feta or parmesan to as much as 1/2 cup grated cheddar or gruyere... You could just as easily use a vegan nut cheese to keep it Paleo, really, anything goes here.
Step 3: The Filling
The improvisation takes off here with vegetables, mushrooms, ham, crumbled bacon, fresh herbs, onions, you name it. Simply sauté a very small hash, the size of 1 zucchini, 1 piece of ham, and 1 shallot for a few minutes in a pat of butter. You could choose the equivalent in spinach, mushrooms, green onions, peas, etc. Make sure to season with dry herbs or sea salt before placing the filling over the cheese barrier.
Step 4: The Custard
Once you have layered the filling over the cheese, turn the oven down to 350 and add the custard. Simply add 3 eggs to 1 cup of milk, whole cream, almond milk, or coconut milk. Add 1/4 tsp sea salt and pour over the filling. Sprinkle some paprika, fresh dill, or chopped parsley over the top and bake at 350 for 35-45 minutes.
If you wanted to skip the crust, you could. Simply brush the bottom of the pie dish with butter or olive oil, fill, and bake. It really is an easy dish to assemble and a fun one to express your creativity. As long as you choose very high quality ingredients, it is bound to be a success.
