Tom Kha Gai

It’s amazing I can even get dinner on the table after cooking 3 meals a day throughout this 6-month quarantine. Sometimes, I have to admit I take short cuts, but I try never to sacrifice nutrition. Some of my favorite meals come from already having bone broth on hand and then adding some simple toppings to make a delicious soup. Here is a version of how I add coconut milk and a few Thai flavors to make Tom Kha Gai in a matter of minutes. Bon appetit!
