Homemade Yellow Curry

My love for turmeric has inspired many curries but I find this homemade yellow curry to be the easiest. Toss in whatever veggies you have on hand and it will always turn out delicious. You can make it vegetarian with chickpeas or tofu for added protein or try chicken or fish. Most people will adore this comforting dish.

My family enjoys jasmine rice better than brown with this dish, but brown rice has more nutritional value. When I compromise and make white rice, I often cook it with bone broth instead of water to add a nutrient dense broth. White rice is high on the glycemic load, so I love to pair it with a coconut milk curry. Adding healthy fats to your grains can slow down the absorption of all that glucose.

This dish is easy to improvise, you can change the veggies and spices to your preference and find your own favorite combinations. Plus, you can have it done in the time that it takes to cook the rice. Now that's efficient.
