Grain Free Chocolate Chip Cookies

If there was a childhood character I could relate to, it would be the cookie monster. I am a sucker for home baked cookies. Is there anything better than the smell of chocolate chip cookies baking in the oven, and the gooey, chewy, chocolatey goodness of that still warm bite dipped in a glass of cold milk?

I didn't think so. Unfortunately, I have had to remove wheat from my diet temporarily while I heal my gut lining from eating processed cookies and ramen all through college. I can do without the wheat bread and muffins, but the cookies, oh the cookies, I simply cannot do without.

I have tried recipes from many a blogger of gluten free, paleo, and grain free cookies and they were good, but never passed the scrutiny of my kids. This recipe takes the cake for two reasons. First, you can make substitutions which I love, because it allows me the freedom to make mistakes or tailor the recipe to my needs. Bakers know that this is not always acceptable in baking. Second, my kids approved them, the neighbor kids approved and my husband and I fought over the last few. Enjoy!!!
