Delicata Moons

This is one of my favorite recipes. You don't have to peel the Delicata moons, so they are beautiful and easy to prepare. Delicata caramelizes into deliciousness with a simple touch of salt and butter and friends will compliment you like crazy. Tis the season for squash so organic varieties are inexpensive and plentiful. Try this nutrient dense dish for your next special dinner. You won't be disappointed!

I got a little carried away while getting ready to roast my moons. I often just add everything in the fridge or in the pantry until the cookie sheet is full. This recipe is specific to the Delicata squash, yellow, with green stripes, second from the left.
