Gluten Free Lemon Poppyseed Scones

My daughter loves lemon poppyseed anything. Grocery stores are full of options, but they're also full of refined sugars, refined oils, and refined wheat which is wrecking the nation's health. You may not realize it yet, but that scary trinity is causing a ton of havoc on gut health, which is what determines our allergies, and causes autoimmune disorders.

Not willing to give up our lemon poppyseed love, we chose to make these with almond flour and butter. I've also listed variations you could choose to make them dairy free or even egg free too.

I love recipes that don't have to have an exact scientific method of measuring and cooking.

Try a few different combinations until you make your perfect scone. Any way you go about it, these are a delightful weekend treat.
