Traditional Muesli

By Jessica Campbell, MS, FNTP

Traditionally soaked muesli is a great way to prepare a quick breakfast, eat whole grain oats that are more digestible, and get your dose of healthy probiotics. My daughter makes this for herself the night before by adding 1 cup oats to 1 cup yogurt. She adds a spoonful of honey, a bit of cinnamon, it takes her 5 minutes and saves me from a morning rush.

When I make muesli, I like to add dried fruits, seeds, and raw nuts like the traditional Swiss recipes from the 1900s. I use unique spices changing it up a bit, but the premise is always the same. You soak your hand rolled oats in plain whole fat yogurt or kefir over night and you sweeten it with raw honey if necessary. We choose a 1:1 ratio but you can add more grain or more yogurt depending on the squishiness you like.

The healthy bacteria in the yogurt will break down the anti-nutrients in the oats and create a healthier grain for your body. I love how easy it is to throw together the night before, and how it frees up your morning rush. Try the basic recipe and toss in your favorite ingredients from the many delicious options.
